Christmas has literally come so fast!

Even though we've been super busy at HQ, there's no need to stress with this recipe. It'll have all your guests drooling!

What you'll need:

1 cup 100% natural peanut butter (smooth or crunchy)

3.5-4 tablespoons pure maple syrup, to taste

2-3 tablespoons coconut flour

Fine grain sea salt, to taste (or 1/4 teaspoon)

6 tablespoons gluten-free rice crisp cereal

3/4 cup dark chocolate chips

1/2 tablespoon coconut oil


Method: 

1. In a large bowl, mix together the peanut butter and maple syrup for 30-60 seconds until it thickens up

2. Stir in the coconut flour until combined. Let it sit for a couple of minutes to firm up. If it’s too runny add more coconut flour, or if it’s too dry, add a little more syrup

3. Add salt to taste and stir in the cereal

 

 

4. Shape into small balls (should make about 17)

 

 

5. In a small pot, add the chocolate chips and coconut oil and stir frequently over low heat. Remove from heat once chips have melted, stir until completely smooth

6. With a fork, dip balls into melted chocolate. Tap off excess chocolate and place ball on a plate or board lined with oven paper

7. Put balls in freezer for 6-8 minutes until mostly firm

8. Drizzle left over chocolate and re-freeze for another 10-15 minutes until set
